A long, cool fermentation gives our flagship loaf its open crumb, deep flavor, and that crackle you hear when the crust gives way. Made with three ingredients: flour, water, salt — and time.

How we work.

We let our doughs rest overnight. The wait develops flavor, improves digestibility, and makes for a crust that sings.

Simple ingredients.

Flour. Water. Salt. Wild yeast. Real butter. Real cinnamon. Nothing you can’t pronounce, nothing we wouldn’t feed our own.
